My nephew wanted to make some more blackberry mead, so we followed Jack Keller’s recipe and tended it carefully and then then waited and racked it and waited and got delayed and finally got around to bottling it this weekend.
I gathered my bottles and washed them.
I did fifteen bottles because that’s all the corks I had left (oops). Some of these I have used two or three times before as you can see by the labels crossed out and new things added.
Brandon came out and we used the autosiphon to fill our bottles. It is a beautiful red color. If I had been smart, I would have found a clear bottle to show you.
Then it was time to cork them.
The corker I have is pretty basic, and it’s really hard to control the depth of the cork, but Brandon did quite well.
We still have the gallon carboy to do after my mom picks up more corks for me.
Then we just have to wait two or three years for it to age. Mead is not something to try if you are an impatient person.

It really was my nephews that had the idea to make wine/mead. It’s been a fun family project. They probably wouldn’t be able to wait, but it’s in my basement. That makes it easier. 🙂

The last batch we made was really good. That’s why we tried it again with a bigger batch.
Blackberry Meade – haven’t heard about it before but will have to find out more. It sounds like a long time to wait though.
It is basically blackberry wine, but using honey instead of sugar makes it mead. It does have a really good flavor (if you can wait). 😉

I well remembered walk that I took with my wife ended in us filling our lunch boxes with hedgerow gathered black-berries on the way down from a hill top in the north of England. The blackberries here are a weed plant, and the dont get enough rain to get good fruit.

Thanks. The blackberries we used were from my uncle’s home in Oregon. The last batch we made had store bought fruit, and it was really good.

I didn’t really know about it until my nephew decided he wanted to try making some. It’s been a lot of fun.
I didn’t realize it takes mead so long to age! I have a new appreciation for it.
It has the longest aging time of any of the wines/mead we’ve made. Good things come to those who wait! 🙂

The berry mead is going to taste fabulous but how hard to wait. We have made berry wines and beer, years ago, that tasted delicious. I enjoyed your previous post too and your photos of your animals.
