Breakfast Cake?

When you have very ripe bananas, you know it’s time to bake.  I decided to try creating the perfect breakfast cake.

Don’t judge me.  I know we’ve all had cake for breakfast before.  This cake, is perfect for breakfast–part coffee cake; part oatmeal muffin; part banana cake; part oatmeal choclate bars.  It’s oatmeal banana cake with a crumb topping.

Start by making the topping.  Mix and set aside:

  • 1/2 cup coconut
  • 3/4 cup oatmeal
  • 1/2 cup brown sugar
  • 1/4 cup melted butter
  • 1/4 cup chopped nuts (optional-I left them out because I work in a nut free school)

In a large mixing bowl mix in order:

  • 1/4 cup softened butter
  • 1 1/2 cup brown sugar
  • 2 eggs
  • 1 cup flour
  • 2 tsp. baking powder
  • pinch of salt
  • 1/2 cup milk
  • 1 1/2 cup oatmeal
  • 3 bananas mashed in a bowl with 1/4 tsp. soda

 

Set this aside and melt 1 cup of chocolate chips.

Grease a 9 x 13 cake pan and pour the batter into it.  Drop the melted chocolate chips around the top and cut it in with a knife.  Sprinkle the topping on and bake in a 350ºF oven for about 50 minutes.

Yep, the perfect breakfast cake of champions!

Cherry Cheese Bars

Since I’m down to three hens and the Nugget, I’m not really getting eggs.  My sister brought me some eggs from her farm, and since she can’t eat them, she also brought a dozen turkey and duck eggs.

That means I decided to bake.  I also wanted to use some of the cherries from my freezer because they are getting old.

I also love the idea of baking with my chevre (goat cheese).

That means I created cherry cheese bars.  (Don’t worry, I’ve translated the recipe into normal people baking.)

Start by making your cherry pie filling (or getting a can).  I didn’t really use a recipe, but it was about 3/4 of a quart bag of frozen cherries, 3/4 cup of sugar, a teaspoon of vanilla and 2 Tablespoons of cornstarch.  Then I cooked until it was thick and bubbly.  Set that aside.

Make your cheese by mixing thoroughly:

  • 1 cup of chevre (or cream cheese)
  • 2 Tbsp sugar
  • 1 tsp. lemon juice
  • 1 tsp. vanilla

Set that aside and make your batter.  Of course I had to use the turkey eggs for the fun of it.

Cream together

  • 1 cup butter
  • 1 1/2 cup sugar
  • 4 eggs (I used 2 turkey eggs)

Add and mix

  • 1 1/2 tsp. vanilla
  • 1/2 tsp. salt
  • 1 tsp baking powder
  • 3 cups flour

Spray a 9 x 13 baking pan and spread most of the batter on the bottom.  To spread it, I had to spray my hands with no-stick spray and pat it down.

Spread the cherry filling over the top.

Dot the remaining batter over the top.  Fill the spaces up with the cheese mixture.

Bake at 350*F for 45 minutes.

Delicious!

I’m glad I still have a lot of cherries in my freezer.  I certainly want to make this one again!

Friday’s Hunt v2.2

Welcome back to Friday’s Hunt.  I want to thank everyone who joined in last week.  I had a lot of fun visiting everyone who linked up.  It’s very simple.  Anyone can participate.  The link opens at 7pm Central time and will close Sunday at 7pm, so you have plenty of time to enter. I am crazy busy on the farm right now, but I will make sure to visit all participants.  Without further ado, here’s my interpretations for the week.

Starts with B:  Bambi, my beautiful girl, is the youngest doe I kept from my Millie. That means she’s very special to me.  Yet, I can’t touch her.  She is a brat.  She is also a good mom.

I want to keep her little girl, Daisy, so I want to make sure Daisy is sweet.  Not like her mom.  That means I catch Daisy and give her lots of loving.  You should see Bambi.  She gets real close and sniffs and looks like she is certain my cooties are going to kill her daughter.  Makes me laugh.  Bambi deserves it.

Week’s Favorite:  I am thrilled with the rain we’ve had (although it’s still dry) and how the pumpkins are growing.  Obviously, I still have a lot of weeding to do.  At least I have pumpkins growing!

Patriotic:  I was going to do the flag, but I forgot all about it when I was at the market last Friday.  I didn’t make it to any fireworks.  I was really getting worried.  Then I noticed the oven I just put in the soap room for all my baking is patriotically proclaiming it is made in America.
