Avril and Copper

I started selling my kids in an effort to have them gone before I needed to do another round of copper with them, but the last three weeks have been a bit over the top, so I haven’t sold more.

Avril has always been the runt of the triplets, but after the copper last round she perked up.

Unfortunately, poor little Avril is really not doing well now.  She’s looking really bad.


I debated locking her in the first of last week, but it was way too hot, especially since the Love Shack lost half of its shade.  I gave her another round of copper (everyone else will probably get it next weekend (when my eye has recovered a bit more).

Now that our weather has cooled down, I shut her in, and she promptly escaped from the Love Shack. So she’s in the greenhouse.  She is getting a diet overly rich in copper and has everything right there, so she doesn’t have to expend energy keeping up in pasture.

Hopefully, she’ll recover quickly.

Carrot Cake

Just before I nearly impaled myself, I had pulled some carrots.  Now, if you know me, you know I like to turn my veggies into delicious desserts.  In this case, I thought it might help the eye heal too.  You know, carrots are supposed to be good for the eyes.  Anyhow.  I made a carrot cake.

I like easy, so mix everything together:

  • 3 1/2 cups flour
  • 1 Tbsp. cinnamon
  • 1/2 Tbsp. ground ginger
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 4 cups grated carrot
  • 1 cup chopped walnut
  • 1/2 cup oil
  • 1 1/2 cups honey
  • 1 cup buttermilk
  • 4 eggs
  • 2 tsp vanilla

Pour it into a greased 9×13 cake pan and bake ate 350°F until a toothpick comes out clean (about 50 minutes).

I used a traditional cream cheese frosting for it.

Even if it didn’t help my eye heal, it tasted pretty darn good!  It was so good that I grated enough for another cake and froze it.

In other news, I still have no electricity in my house, but we’ve cooled down enough that I took Rocky back over and am sleeping there at night.  I have to admit, I am starting to be a bit anxious to have my electricity restored.

Stormy loves her meds.  You can see I have a syringe in my hand–her sister, Litha, won’t eat it on peanut butter, so she gets the anti-inflammatory as a drench.


Because even though there is all kinds of destruction from the storm, we are still surrounded with beauty.
