Zymase at Work

We’ve been busy starting wine.



There are four kinds in glass carboys in the basement, and I have several more kinds that we are going to make.

Everyone knows that you need yeast to make wine.  It converts sugar into alcohol.  More specifically, zymase is a group of enzymes found within the yeast that cause this change.


The airlock provides evidence that the yeast is doing its job.
