Pumpkin Monster Cookies

I have parent-teacher conferences this week, and the long hours kill me.  To help me get through, I thought I should bake something to snack on. Since we’re almost half way through October (how did that happen?), I decided to go with something inspired by the season~pumpkin monster cookies!

Pumpkin Monster Cookies

Beat together:

3/4 cup pumpkin

1/2 cup Crisco

2 eggs

1 tablespoon milk

1 teaspoon vanilla

1 cup sugar

1/2 cup brown sugar.

Add:

1 tablespoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt

3 cups flour.

Mix thoroughly and add 2 cups of good stuff.  I used: 1/2 cup of special dark chocolate chips, white chips, coconut and walnuts.   If I had had any, I would have used m & m’s instead of the dark chips.  The fun thing about monster cookies is adding whatever you like.  Throw in some raisins.

Bake on a greased cookie sheet at 350* F for about 14 minutes.

This one turned out good enough that I’m not even going to share it with my family to see if it’s blog worthy.  I’m saving them all for conferences!
