I’m probably about two months late for posting this, but my beans just finally started giving me anything to pick. When my family got together for Labor Day, I figured I’d take a bunch of green beans.
Only thing~I don’t care for them raw the way the boys do. I’m tired of just plan boiled beans, so I decided to get creative. I made roasted green beans.
I picked, snapped and washed about six cups of beans. Honestly, how can you really measure something that doesn’t fit properly into the cup?
In a small bowl I put 2 Tablespoons of olive oil.
Then I added 1 teaspoon of chives, 1 teaspoon of dill and 1/2 teaspoon of garlic salt.
That was my original plan, but I decided I wanted a bit more oomph with it, so I added a 1 oz. package of ranch dressing mix.
I poured the oil and herb mixture over the beans.
Then I tossed the beans in the oil mixture and made sure they all got coated.
Then I put them on a cookie and placed them in a 450*F oven.
After about five minutes, I gave them a stir and put them back in for another seven or eight minutes. When they came out, they didn’t taste raw, but they were still crisp.
Now they also had a bit of zing to them!
They were very successful at the picnic.

I think everyone liked it. Even my dad who doesn’t care for green beans thought they were okay.

It was certainly interesting to have everyone snacking on them as finger food and asking what I put on them and just hearing people talk about green beans.

We are still waiting on our beans. The heat we had this summer put them off, and they are just now starting to produce. I look forward to roasted beans

Try them sliced and layered with courgettes (zuccini?), topped with sliced tomatoes and grated cheese, seasoned and sealed into a foil parcel. Bake in a hot oven for 35-40 mins … serve with fresh bread
