Zucchini Patties for Lunch

I have to say, this has become my new favorite summertime lunch.

Measure the following ingredients into a mixing bowl:  1 1/2 cups grated zucchini

1/2 cup finely chopped onion

1 clove of garlic, minced

1 teaspoon parsley and 1 teaspoon chives

Mix these ingredients together.

Smash your saltine crackers.

Add 1/2 cup cracker crumbs to the zucchini mixture and mix them together.  I like to let this sit for just a couple of minutes so the crackers have time to absorb the moisture from the zucchini.

Add 1 egg to the mixture.

Once it is mixed, prepare an iron skillet with some oil and then form the patties.

Add salt and pepper to taste.

Fry the patties until browned.

Transfer to a baking dish and bake at 300*F for 20 minutes.  If you are in a hurry, you can simply add a bit more oil and cook it in the skillet for the entire time.  I’ve done it both ways.

No matter which way you make it, serve it up with some of those fresh tomatoes from the garden and some ranch, and you’ve got the perfect summertime lunch.

I have a hard time actually measuring this out.  I just start with my zucchini and adjust the rest of the ingredients to suit my taste.  These measurements are the ones I used the first time I made it, but feel free to play with the amounts to suit your tastes and the amount of zucchini you have.

    I LOVE zucchini patties… I make mine just alittle different, so many ways to make them, I’m sure theyre all great… I do love to eat mine with garden tomato & ranch too :)

    “L” is for a “Lovely Lunch,” Teresa. :) Your zuchinni fritters look sooooo good! (Could also have used them for the “Z” word.)

    I may have to try them. Are zuchinni seeds hard to remove? I cannot eat seeds. Possibly I would add a little meat, probably crumbled fried sausage or else diced hot dog weiners.
    ..
    BTW, what kind of sauce is that white stuff? Or would they go good with ketchup? Especially my kind with the sausage or hot dog meat.

      Thought about waiting for Z, but they would be out of season by then. I didn’t remove the seeds. If you use the squash before they get too big, you don’t have to worry about the seeds. The white is just ranch dressing. Everything is good with ranch! If I weren’t a vegetarian, I’d go for some crumbled bacon in them. :-)

    Oh wow.

    I’ve not seen this recipe before and it sounds absolutely perfect.

    I am all about vegetarian meals anymore…throw a little brown rice on that plate and it would be a perfect dinner around here!
